Sushi vinegar has its name because it is most commonly used to make sushi rice.
Remarkably versatile ingredient, great to use in ramen, as a salad dressing, or as part of a marinade. Use to give extra depth and acidity to a meal.

Ideal for making sushi, as dressing or marinade.
Preparations:
Carefully combining fermented rice, sugar and salt into this light seasoning, this gluten free rice vinegar adds a mouthwatering glaze to sushi rice, giving each bite an excellent shine. A perfect pairing for the fresher flavours and textures of sashimi and sushi toppings.
Recipe:
Sushi rice
2 tbsp rice vinegar. 2 tbsp sugar 1 tsp salt
500g cooked rice.
Wash the rice 3 times or leave it in the water for 30mins before washing.
When draining, use a sieve and let the rice drain for 30 minutes to absorb the moisture on the surface then cook.
Add rice vinegar, sugar and salt to approx. 500g of cooked rice.
Add the Sushi Vinegar promptly, pouring it as evenly as possible over the rice.
Using the spatula, make gentle cutting and folding movements to mix the vinegar thoroughly into the rice, being sure not to crush the kernels by mashing or stirring.
Ensure rice is thoroughly cooled and refrigerated before making sushi.
Storage:
Store in a cool, dry and dark place.
Once opened keep refrigerated and consume within 12 weeks.
