Giving sushi rice its crisp flavour and delicate texture doesn't have to be complex, when all the necessary flavour qualities are packed into this kelp-seasoned sushi rice seasoning. A sweet vinegar distilled from sake lees and a subtle addition of kelp, sugar and salt, this light golden seasoning provides the ideal balance of sharp taste and savouriness, so every bite of sushi is irresistibly fresh and fulfilling. Bottled in glass to keep it gentle taste refreshingly sweet and aroma free, simply stir this vinegar into freshly-cooked rice to complete a fluffy base for your maki and nigiri sushi, or even stir it into marinades for a juicy-sweet meat or vegetable glaze.

Mizkan sushi seasoning, also known as sushi vinegar, sushisu or sushi-su, is a ready-blended mix of rice vinegar, sugar, and salt used to turn normal short-grain Japanese rice into sushi rice.

Use a paddle to fold the seasoning into still-warm, cooked short-grain rice to make sushi rice. Sushi seasoning gives the rice a distinctive sweet-sour taste, and sticky texture - perfect for rolling in nori seaweed sheets to make maki rolls, or top with raw fish for nigiri sushi.


Versatile and a base of many salad dressings, pickles, marinades, stews, stir-fry.

Ideal for making sushi. 


This rice vinegar can be used in a number of ways:

Mix with sugar and salt to create sushi rice vinegar.
Drizzle a little over your salad as a dressing.  
Use as an ingredient to replace added salt for extra flavour.



To make sushi rice, mix 5tbsp of sushi seasoning with 4 cups of hot cooked sushi rice (or 2 cups when uncooked). For the 'perfect' sushi rice, experts recommend mixing the rice with the sushi seasoning in a hangiri sushi barrel, which is wooden to absorb excess moisture.


Store in a cool dry place.
