Pinapaitan is a bitter stew from the Ilocano region in the north of the Philippines.
Traditionally this dish is prepared with goat meat and organ meats. Bile gives this stew a bitter taste.
Nowadays goat is often replaced by beef. The taste of the food is exotic but when you're used to it, you will love it.
Pinapaitan can also be prepared without bile because Mama Sita's Ilocano Pinapaitan (Bitter Stew Mix) already contains spices and aromas that give the dish a bitter taste and at the same time release a delicious citrus flavor.
Usage:
Ideal for cooking bitter Stew.
Preparations:
1pack Mama Sita’s Pinapaitan Mix dissolve in
2 1/2 cups (625ml) of broth, from boiling beef
Recipe:
Ilocano Pinapaitan : makes (6-8 serving)
Ingredients:
2.2 lbs (1kg) beef - boiled until very tender and cut
into serving pcs.
[A combination of Brisket, Liver & Triie nay be used.]
1pc green chilli
1 packet Mama Sita’s Pinapaitan Mix
Combine all ingredients in a sauce pan and bring to a boil.
Simmer for 5 mins and serve.
