Sweet & Sour Mix
We give you just the right blend of sweet and sour as a dipping sauce or as a base for the popular "Escabeche."
Ingredients:
Cane Sugar, Tomato Powder, Corn Starch, Iodised Salt, Citric Acid, Paprika, Ginger Powder, Achuete Powder, Corn Starch Mix, Spices (Onion Powder, Garlic Powder, White Pepper).
Escabeche Recipe (Serves 4-5):
1 pouch (57g) Mama Sita's Sweet & Sour (Escabeche) Mix, dissolved in 3/4 cup (187.5ml) water
14 oz (400g) cleaned, whole fish or fish fillet
salt to taste
1/2 cup (125ml) cooking oil
1 tbsp (15g) thinly sliced ginger
3 cloves
20g crushed garlic
1 1/2 tbsp (20g) sliced onion
1 tbsp (15g) thinly sliced carrot
1 1/2 tbsp thinly sliced red bell pepper
Cooking Instructions:
1. Season fish with salt. Fry it in hot oil until crisp and golden. Set aside
2. In a saucepan, with heated cooking oil, saute ginger, garlic, onions, carrots & bell pepper for 2 minutes
3. Pour in dissolved Mama Sita's Sweet & Sour (Escabeche) Mix into sauteed vegetables
4. Bring to a boil and simmer for 2 minutes or until sauce thickens. Add fish & simmer for another minute
As a dipping sauce:
In a small saucepan, dissolve 1 pouch (57g) Mama Sita's Sweet & Sour (Escabeche) Mix in 3/4 cup (187.5ml) pineapple juice or water. Bring to a boil & simmer, stirring constantly for 2 minutes or until sauce thickens.
