Palm sugar, also known across Asia as jaggery or nam tan peep in Thai, is a crystalline sweetener which comes from the nectar of flowers high up in coconut palm trees. Has similar properties to the more common cane sugar, but is richer in nutrients because it hasn’t been bleached or refined - hence the butterscotch colour.
