Spice Paste for Szechuan Hot & Sour Soup Suan La Tang (Hot)

This authentically flavoured hot & sour soup from China's Szechuan Province is a meal on its own.

Seasoned with a wonderful sharp kick of spice to contrast its delicious umami depth, Szechuan's famously juicy broth comes easy to pour and prepare with the tasty aid of this instant spice paste. A rich soy sauce base that packs a punch of zesty red chilli and vinegar, this paste balances its savoury sharpness with just the right amount of sweet flavour, to make a broth that's divinely filling and refreshing. Best garnished with crunchy mushrooms and beans so you can really squeeze out the succulent spice, turn this simple paste into an eclectic soup, tingling with flavour.

Soya sauce (soyabean, wheat flour, salt, sugar), sugar, red chillies, salt, onion, spirit vinegar, dried fungus, modified starch (tapioca), colour (caramel/150A).

• Heat oil in a saucepan on medium heat. Add your choice of meat, seafood or vegetables and stir fry for 1 minute.
• Add water, chicken or vegetable broth and the spice paste. Stir well and bring to the boil. Add vegetables to boil.
• Mix cornstarch with 2 tablespoons of water until smooth and add to the soup for body. Simmer for 3 minutes whilst gradually stirring in 1 beaten egg. Garnish and serve hot.


Keep away from direct sunlight and store in a cool, dry place. Once opened, use immediately.

Szechuan Hot & Sour Soup (Serves 4):

1 packet Szechuan Hot & Sour Soup Spice Paste
1 tbsp vegetable oil
100g (3.5 oz) boneless chicken breast meat, cut into thin strips
4 cups (880 ml) water or chicken broth (unsalted)
70g (2.5 oz) mixed vegetables, finely chopped
2 tbsp cornstarch
2 tbsp water
1 egg, beaten
Chopped spring onions as garnish

Cooking Instructions:
1. Heat oil in sauce pan on medium heat. Add meat, stir-fry for 1 minute
2. Add water or chicken broth and spice paste, stir well and bring to boil. Add mixed vegetables
3. Mix corn starch with 2 tbsp water until smooth, add into the soup. Simmer for 3 minutes. Gradually stir in egg. Garnish and serve hot

Cooking Tips: Prawns, squid or cubed fish fillet may be used instead of chicken. For a vegetarian soup, use tofu, black fungus (wood ear) and mushroom
