Spice Paste for Indonesian Rendang Curry

A fiery, fragrant seasoning that caramelises juicy cuts of meat in authentic Indonesian spice, this instant paste sachet makes a rich Rendang curry easy to prepare. Based on the marinade traditionally used to spicily preserve meat, this red chilli pepper paste uses a punchy mixture of ground herbs and spices to accentuate the tenderness of your ingredients, flavouring them in a tangy, sauce-less coating that's still succulent to savour.
This hot, dry curry of tenderly simmered meat has a rich coconut taste flavoured with robust, tangy spices.

Red Chillies, Soybean Oil, Onion, Galangal, Garlic, Salt, Shallots, Sugar, Ginger, Lemongrass, Ground Turmeric, Coriander Seed, Cumin, Herbs, Spices.

Preparations:
• Heat oil in a saucepan on medium heat. Add spice paste and stir fry for 30 seconds.
• Add meat and stir fry for 2 minutes. Lower the heat to add coconut milk and bring up to a boil. Simmer and cover for 30 minutes.
• Remove the cover and continue to simmer for a further 20 minutes, until meat is tender and curry sauce has almost dried. Stir occasionally to prevent burning.
• Garnish and serve hot.
Storage
Keep away from direct sunlight and store in a cool, dry place. Once opened, use immediately.

Indonesian Rendang Curry (Serves 4):
Ingredients:
1 packet Indonesian Rendang Curry Spice Paste
2 tbsp vegetable oil
450g (1lb) chicken, lamb or beef, cubed
2 cups (440ml) coconut milk or milk
Kaffir lime leaves as garnish
Cooking Instructions:
1. Heat oil in non-stick saucepan on medium heat. Add spice paste and stir-fry for 1/2 minute
2. Add meat and stir-fry for 2 minutes. Lower heat, add coconut milk and bring to boil. Simmer and cover for 30 minutes
3. Lift the cover and continue to simmer for another 20 minutes or until meat is tender and gravy almost dries. Stir occasionally to prevent burning. Garnish
Cooking Tips: If more gravy is preferred, add 1 cup (220 ml) more of coconut milk or milk. If chicken meat is used, adjust cooking time accordingly.
