Recipe:
Sweetened Purple Yam
Ingredients:
1.1/2 cup Grated purple yam,
1 cup Evaporated milk or (traditional) coconut milk. 14z Condensed a pinch of salt,
1 tbsp: Butter or margarine.
COOKING PROCEDURES:
Melt butter or margarine in a big wok at medium heat and add Condensed milk. Mix well and add grated purple yam. Keep stirring the mixture at low heat for 30 minutes until it becomes sticky and dry.
Add evaporated milk and continue to mix for another 15 minutes. Let it cool on a large platter and refrigerate before serving.
Purple Yam Pudding
ingredients:
16 oz Grated Purple Yam, milk
1/2tsp. Vanilla extract
1 tsp. Baking powder
500ml water
1 tbsp, melted Butter
125g rice flour
400g sugar
300ml Evaporated milk
COOKING PROCEDURES:
Grease inside the rectangular loaf pan (9"x5"x3") with butter. Add grated purple yam, rice flour, sugar, evaporated milk, vanilla extract and baking powder into a large bowl and mix them thoroughly. Pour the mixture into, a loaf pan and steam it for 40 minutes until firm. Then let it cool for a few minutes before serving.
Storage:
Keep Frozen.
Defrost thoroughly before use.
Once thawed do not freeze. Once thawed cooked thoroughly.
