Called 'donko' in Japanese, this high-grade type of
shiitake mushroom is harvested young, great for
giving a springy, full-bodied texture and added
depth of flavour to your cooking. These mushrooms are specially dried in order to preserve freshness and retain its hearty, rich in umami, intense flavour and aroma. Great for soups, stews, stir-fries and rice dishes or to make vegan-friendly dashi soup stock.

Usage:
Use for stir-fries, soup, stews, rice.
Preparation:
1. Rinse carefully under cold water. For best results soak in cold ware prenight or until sort. Alternatively, soak in warm water for 30 mins.
For immediate use, submerge the mushrooms in warm water in a container (with lid), add 2 tsp of
sugar, close the lid and shake for a few minutes or until soft.
2. Cook together with your dish for a minimum of 5 minutes to give a deep and umami rich flavour and
fragrance.
The water used for rehydrating the mushrooms can also be used as stock to add extra umami to soups.
Storage:
Store in a cool dry place.
Once opened keep bag sealed and use within 4
weeks.
